Generally speaking when you're dueling at 80, it's considered bad form to use a potion or a bandage unless it's something your class comes with, such as a warlock Healthstone.
Any other time it's free-for-all. In this case, just take it as a learning experience and move on. :)

People %^&*! and moan about Potions in duels all the time...
My personal philosophy for duels is "If it goes in Arena, it goes in a duel". People complain about me using my Healthstone in a duel (I am a warlock). Not only is Healthstone of my TALENTS and one of my GLYPHS, it is a fundamental part of my class. And people complain because I use it in a duel?
On the other hand, certain potions are simply BS to use in a duel. For instance, when I am $%^&ed off at rogues in general I pop
one of these
right before a rogue opens up on me. Fun stuffs.

Ok but what about say, a pallys ability to heal themselves? Is it acceptable to use the ability and not a potion or bandage or food item? and if you could, tell me what the difference is? Im serious because I want to know what the general unspoken rules are. thanks in advance for your advice.
A Paladin healing = ok
a paladin using a health potion = not ok.
The difference is that it's a base ability that the class has, not something that they get because they have money or time. Rich paladins and poor paladins can both heal. it's not necessarily correct, but it's still the basic convention that most people use.
Of course you'll see people argue and complain about it and if you agree on something ahead of time with the guy you're dueling go right ahead, but nine times out of ten... If it's not a class/racial ability, it's frowned upon. Heck like Fingulfin said even the warlock abilities some people complain about, but that's not the norm. :)
Good luck and happy dueling. You'll learn most of it as you go along and pick up your own habits. so don't worry too much about this low level duel experience.

I was of the mind that using Potions and bandages in duels is kinda unfair, until i read what Eluneril said about Alchemists having Potions as their class skill. My Lock is a 450 Alch/Scribe. Surely a JC wouldn't change out his gems or trinks, so why should an Alchemist not use his Pots? The fun of an engineer is using those cool toys. I think you should just use whatever you can. You will become a better dueler if you expect the unexpected.

"Ok I'll duel you. You're a Rogue? You can't stealth. A Mage? You have to melee. A Warrior? Take out your gun. A Pally? Stop facerolling. A DK? Fight me unarmed. A Hunter? Put your pet on passive. A Preist? No healing. A warlock? No Fears/DoT's. Shaman? No heals/totems. A Druid? No forms/heals. Got a problem with it? Well I guess you can deal with me using a potion."
That's what I would do.

To me it's a waste to spend pots and bandages in duals. There's not much to earn there anyway.
My thoughts exactly and I personally consider it more challenging to fight someone who uses a pot in a friendly duel when i don't. I won't always have a pot available so beating someone who does makes me a bit more skilled in pvp and prepared for any situation.
